Pumpkin Cake Roll
- 3 eggs
- 1 cup sugar
- 2/3 cup canned pumpkin
- ¾ cup baking mix
- 2 teaspoons of ground cinnamon
- 1 teaspoon pumpkin pie spice
- ½ teaspoon ground nutmeg
- 1 cup chopped walnuts
- 2 3oz packages of cream cheese
- ½ cup butter
- 1 cup confectioners’ sugar
- 1 teaspoon vanilla extract
How to make the cake roll
You’ll first need to line a greased 15”x10”x1” baking pan with waxed paper. Grease the paper, and set the pan aside. In a large bowl, beat the eggs for about three minutes. Gradually add the sugar and beat that mixture for two minutes—or until it becomes thick and lemon-colored. Stir in the pumpkin. Combine the dry ingredients in a separate bowl. Fold the dry ingredients into the pumpkin mixture. Spread the batter evenly in your prepared pan. Sprinkle the top with walnuts.
Using your Electrolux oven parts, bake at 350 degrees for thirteen to fifteen minutes—or until the cake springs back when lightly touched. Let it cool for five minutes. Invert the cake onto a kitchen towel dusted with confectioners’ sugar and gently peel off the wax paper. Roll up the cake in the towel like a jelly roll (starting with the short side). Let it cool completely on a wire rack.
For the filling, beat cream cheese, butter, sugar, and vanilla until smooth. Unroll the cake, spread the filling, and gently roll it back up. Place the roll seam side down on a platter and refrigerate until serving.
